Lets make some Chilaquiles Verdes!! This is my absolute favorite breakfast ever!🍳
Theres so many recipes for Chilaquiles Verdes with various types of chiles, cheeses, toppings etc. this is what I like and what I grew up eating!
This feeds 3ish people

Here are the ingredients:
-7 tomatillos
-2 jalapeños
-1/2 onion
-1/2 bunch of cilantro
-corn tortillas (I used like 3/4 pack of tortillas)
-garlic
-ribeye (your choice of protein, most times I use cecina)
-eggs
-avocado
-avocado oil
-seasonings
-cheese (my fav is queso fresco o queso Oaxaca)
Heres the breakdown:
• Bring tomatillos, jalapeños, onion, and garlic to a boil, simmer until done (approx. 15 mins). When done, transfer to blender. Add salt, pepper, cilantro (save a little bit of cilantro for end), blend.
• Cut up ribeye + season to taste (I use cayenne, paprika, s+p) I typically use cecina instead of ribeye, but thats all I had! Use whatever you’d like- some people even use chicken!
• Add oil to a pan and cut up your tortillas into small pieces, add pan and cook to liking.. some people like their tortillas crispy- I don’t. I grew up eating them on the softer end!
• Add salsa into tortillas and mix
• Cook eggs to liking
• LISTO!! 😋😋
• Assemble plate!! Add your chilaquiles, onion, protein, eggs, cilantro, avocado. At this point I would also typically add sour cream and queso fresco or queso Oaxaca- I just didn’t have it:/
